Description

A simple and satisfying recipe for creamy white beans infused with Parmesan cheese and bright lemon. Perfect as a side dish or a light meal.


Ingredients

  • 2 tablespoons unsalted butter
  • 1 tablespoon olive oil
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 (15-ounce) can cannellini beans, rinsed and drained
  • 1/2 cup low-sodium vegetable broth or chicken broth (or water)
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 1 tablespoon fresh lemon juice, or to taste
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley, chopped, for garnish (optional)

Instructions

  1. 1. In a medium skillet or pot, melt the butter with the olive oil over medium heat.
  2. 2. Add the finely chopped yellow onion to the skillet and cook, stirring occasionally, until softened and translucent, about 5-7 minutes.
  3. 3. Stir in the minced garlic and cook for another minute until fragrant.
  4. 4. Add the rinsed and drained cannellini beans to the skillet. Stir them around to coat them with the onion and garlic mixture.
  5. 5. Pour in the vegetable broth (or chicken broth, or even water). Bring the mixture to a gentle simmer.
  6. 6. Let the beans simmer for about 5-7 minutes to allow them to warm through and absorb some of the liquid. Gently mash a few of the beans against the side of the skillet to help create a creamy texture.
  7. 7. Remove the skillet from the heat.
  8. 8. Stir in the grated Parmesan cheese until it’s melted and incorporated into the beans, creating a creamy sauce. Add a tablespoon or two of broth or water if needed to reach desired consistency.
  9. 9. Drizzle in the fresh lemon juice. Start with a tablespoon and taste; add more if desired.
  10. 10. Season generously with salt and freshly ground black pepper to taste. Taste and adjust seasonings.
  11. 11. Garnish with chopped fresh parsley, if desired.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a skillet over low heat with a splash of liquid, or in the microwave. Avoid high heat to prevent drying out.
