Ingredients

  • 1 pound boneless, skinless salmon fillet
  • 1 tablespoon olive oil, plus more for cooking
  • Salt and freshly ground black pepper
  • 1 pound potato gnocchi (store-bought or homemade)
  • 2 cloves garlic, minced
  • 1/4 cup dry white wine (like Pinot Grigio or Sauvignon Blanc)
  • 1/2 cup heavy cream
  • 1/4 cup grated Parmesan cheese, plus more for serving
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons chopped fresh dill, plus more for garnish
  • Optional: A handful of fresh spinach or peas

Instructions

  1. 1. Pat the salmon fillet dry with paper towels. Season generously with salt and pepper. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Sear the salmon for about 3-4 minutes until golden. Flip and cook for another 3-5 minutes, or until cooked through. Remove from the skillet and flake the salmon into bite-sized pieces.
  2. 2. While the salmon cooks, bring a large pot of salted water to a boil. Add the gnocchi and cook according to package directions, until they float. Reserve about 1 cup of the gnocchi cooking water before draining.
  3. 3. In the same skillet, add a little more olive oil if needed. Reduce heat to medium. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. 4. Pour in the white wine and scrape up any browned bits from the bottom of the skillet. Let it simmer for about 1-2 minutes.
  5. 5. Stir in the heavy cream and bring to a gentle simmer. Cook for about 2-3 minutes until the sauce begins to thicken.
  6. 6. Stir in the grated Parmesan cheese and lemon juice until melted and smooth.
  7. 7. Add the flaked salmon and drained gnocchi to the skillet. If using spinach or peas, add them now. Toss gently to coat.
  8. 8. If the sauce seems too thick, add a splash of the reserved gnocchi cooking water until desired consistency is reached.
  9. 9. Stir in the chopped fresh dill. Taste and adjust seasoning with salt and pepper.
  10. 10. Serve immediately, garnished with extra dill and Parmesan cheese.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 2-3 days. Gently reheat on the stovetop over low heat, adding a splash of milk or water if the sauce has thickened too much. Avoid microwaving if possible.
