A comforting and easy weeknight meal featuring flaky salmon nestled in creamy, corn-infused orzo pasta. This dish is simple to prepare and deliciously satisfying for any occasion.

- 1 tablespoon olive oil
- 2 salmon fillets (about 6 ounces each), skin on or off as preferred
- Salt and freshly ground black pepper, to taste
- 1 tablespoon unsalted butter
- 1 small yellow onion, finely chopped
- 2 cloves garlic, minced
- 1 cup orzo pasta
- 3 cups low-sodium chicken or vegetable broth
- 1 ½ cups unsweetened almond milk or regular milk
- 1 ½ cups frozen corn kernels
- ½ cup grated Parmesan cheese
- 2 tablespoons fresh chives, chopped
- Lemon wedges, for serving (optional)
Instructions
- 1. Pat the salmon fillets dry and season generously with salt and pepper.
- 2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 4-5 minutes per side until cooked through and flaky. Remove from skillet and set aside.
- 3. Reduce heat to medium and add butter to the same skillet. Add chopped onion and sauté until softened, about 5-7 minutes.
- 4. Add minced garlic and cook for 1 minute until fragrant. Add orzo and toast for 1-2 minutes.
- 5. Pour in broth, scraping up browned bits. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes until orzo is al dente and liquid is absorbed.
- 6. Stir in almond milk and corn. Cook uncovered for 3-5 minutes until creamy and heated through.
- 7. Remove from heat and stir in Parmesan cheese until melted. Taste and adjust seasoning.
- 8. Gently nestle the seared salmon fillets back into the orzo.
- 9. Garnish with fresh chives and serve with lemon wedges, if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat gently on the stovetop over low heat with a splash of milk or broth, or microwave in short intervals, stirring between each.
