Description

A comforting and easy weeknight meal featuring flaky salmon nestled in creamy, corn-infused orzo pasta. This dish is simple to prepare and deliciously satisfying for any occasion.


Ingredients

  • 1 tablespoon olive oil
  • 2 salmon fillets (about 6 ounces each), skin on or off as preferred
  • Salt and freshly ground black pepper, to taste
  • 1 tablespoon unsalted butter
  • 1 small yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup orzo pasta
  • 3 cups low-sodium chicken or vegetable broth
  • 1 ½ cups unsweetened almond milk or regular milk
  • 1 ½ cups frozen corn kernels
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh chives, chopped
  • Lemon wedges, for serving (optional)

Instructions

  1. 1. Pat the salmon fillets dry and season generously with salt and pepper.
  2. 2. Heat olive oil in a large skillet over medium-high heat. Sear salmon for 4-5 minutes per side until cooked through and flaky. Remove from skillet and set aside.
  3. 3. Reduce heat to medium and add butter to the same skillet. Add chopped onion and sauté until softened, about 5-7 minutes.
  4. 4. Add minced garlic and cook for 1 minute until fragrant. Add orzo and toast for 1-2 minutes.
  5. 5. Pour in broth, scraping up browned bits. Bring to a simmer, then reduce heat to low, cover, and cook for 10-12 minutes until orzo is al dente and liquid is absorbed.
  6. 6. Stir in almond milk and corn. Cook uncovered for 3-5 minutes until creamy and heated through.
  7. 7. Remove from heat and stir in Parmesan cheese until melted. Taste and adjust seasoning.
  8. 8. Gently nestle the seared salmon fillets back into the orzo.
  9. 9. Garnish with fresh chives and serve with lemon wedges, if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days. Reheat gently on the stovetop over low heat with a splash of milk or broth, or microwave in short intervals, stirring between each.
