Description

A hearty one-pot meal featuring seasoned ground beef, tender potatoes, and melted cheese all cooked together for easy cleanup and maximum flavor.


Ingredients

  • 2 pounds ground beef (80/20 blend)
  • 3 pounds russet potatoes, peeled and cubed
  • 1 large yellow onion, diced
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (10.75 oz) cream of mushroom soup
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped
  • 2 green onions, sliced

Instructions

  1. 1. Heat olive oil in a large pot over medium-high heat. Brown ground beef for 8-10 minutes, breaking it up as it cooks.
  2. 2. Add diced onion to pot and cook 3-4 minutes until softened. Add garlic and cook 30 seconds more.
  3. 3. Season with salt, pepper, garlic powder, onion powder, paprika, and thyme. Stir to combine.
  4. 4. Add cubed potatoes to pot. Pour beef broth over mixture.
  5. 5. Spoon cream of mushroom soup over potatoes and stir into broth.
  6. 6. Bring to a boil, then reduce heat to medium-low. Cover and simmer 20-25 minutes until potatoes are tender.
  7. 7. Remove from heat and sprinkle both cheeses over top. Cover and let sit 3-4 minutes.
  8. 8. Gently stir melted cheese throughout dish. Garnish with parsley and green onions before serving.

Notes

Store leftovers in refrigerator up to 4 days. Reheat gently with a splash of broth if needed. Can be frozen up to 3 months.
