Description
A comforting and easy Cheesy Hamburger Potato Casserole recipe, perfect for weeknight dinners. Made with ground beef, potatoes, creamy soup, and lots of cheddar cheese.

- 1 pound lean ground beef
- 1 medium onion, chopped
- 1 (10.75 ounce) can condensed cream of mushroom soup
- ½ cup milk (or water)
- ¼ cup sour cream
- 1 teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 4 cups thinly sliced cooked potatoes (boiled or baked until tender)
- 1 ½ cups shredded cheddar cheese, divided
- Optional: ¼ cup breadcrumbs for topping
Instructions
- 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
- 2. In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is softened. Drain grease.
- 3. Stir in condensed cream of mushroom soup, milk (or water), sour cream, garlic powder, salt, and pepper. Cook until well combined and heated through.
- 4. Gently fold in sliced cooked potatoes and ½ cup shredded cheddar cheese.
- 5. Spoon mixture into prepared baking dish.
- 6. Sprinkle remaining 1 cup shredded cheddar cheese over top. Add breadcrumbs if using.
- 7. Bake for 20-25 minutes, until heated through and cheese is bubbly.
- 8. Let stand 5-10 minutes before serving.
Notes
Store leftovers covered in the refrigerator for 3-4 days. Reheat individual portions in the microwave or larger amounts in a covered oven at 325°F (160°C) until warm.
