Description

A comforting and easy Cheesy Hamburger Potato Casserole recipe, perfect for weeknight dinners. Made with ground beef, potatoes, creamy soup, and lots of cheddar cheese.


Ingredients

  • 1 pound lean ground beef
  • 1 medium onion, chopped
  • 1 (10.75 ounce) can condensed cream of mushroom soup
  • ½ cup milk (or water)
  • ¼ cup sour cream
  • 1 teaspoon garlic powder
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 cups thinly sliced cooked potatoes (boiled or baked until tender)
  • 1 ½ cups shredded cheddar cheese, divided
  • Optional: ¼ cup breadcrumbs for topping

Instructions

  1. 1. Preheat oven to 375°F (190°C). Lightly grease a 9×13 inch baking dish.
  2. 2. In a large skillet over medium-high heat, cook ground beef and onion until beef is browned and onion is softened. Drain grease.
  3. 3. Stir in condensed cream of mushroom soup, milk (or water), sour cream, garlic powder, salt, and pepper. Cook until well combined and heated through.
  4. 4. Gently fold in sliced cooked potatoes and ½ cup shredded cheddar cheese.
  5. 5. Spoon mixture into prepared baking dish.
  6. 6. Sprinkle remaining 1 cup shredded cheddar cheese over top. Add breadcrumbs if using.
  7. 7. Bake for 20-25 minutes, until heated through and cheese is bubbly.
  8. 8. Let stand 5-10 minutes before serving.

Notes

Store leftovers covered in the refrigerator for 3-4 days. Reheat individual portions in the microwave or larger amounts in a covered oven at 325°F (160°C) until warm.
