  • 1 pound lean ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt, or to taste
  • ½ teaspoon black pepper, or to taste
  • 1 (15 ounce) can tomato sauce
  • 1 teaspoon dried Italian seasoning
  • 2 medium zucchinis (about 1.5 pounds total), trimmed and thinly sliced or diced
  • 1 (10.5 ounce) can condensed cream of mushroom soup
  • ½ cup milk
  • 1 cup shredded cheddar cheese, divided
  • Optional: ½ cup breadcrumbs or panko for a crunchy topping

Instructions

  1. 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
  2. 2. In a large skillet, cook ground beef until browned. Drain fat. Add onion and cook until softened.
  3. 3. Stir in garlic, salt, and pepper. Cook 1 minute until fragrant.
  4. 4. Pour in tomato sauce, add Italian seasoning. Simmer 5 minutes.
  5. 5. Prepare zucchini (slice or dice).
  6. 6. In a medium bowl, combine condensed soup and milk until smooth.
  7. 7. Stir ½ cup shredded cheddar cheese into the soup mixture.
  8. 8. Layer half the zucchini in the baking dish.
  9. 9. Spoon half the beef mixture over the zucchini.
  10. 10. Pour half the cheesy soup mixture over the beef.
  11. 11. Repeat layers with remaining zucchini, beef, and soup mixture.
  12. 12. Sprinkle with optional breadcrumbs.
  13. 13. Top with remaining ½ cup cheddar cheese.
  14. 14. Cover with foil and bake for 30 minutes.
  15. 15. Remove foil and bake for 15-20 minutes more, until bubbly and golden.
  16. 16. Let rest 5-10 minutes before serving.

Notes

Store cooled casserole in an airtight container in the refrigerator for up to 3-4 days. To freeze, wrap tightly and freeze for up to 2-3 months. Reheat in the oven at 350°F (175°C) until heated through.
