Ingredients
- 1 pound lean ground beef
- 1 medium onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon salt, or to taste
- ½ teaspoon black pepper, or to taste
- 1 (15 ounce) can tomato sauce
- 1 teaspoon dried Italian seasoning
- 2 medium zucchinis (about 1.5 pounds total), trimmed and thinly sliced or diced
- 1 (10.5 ounce) can condensed cream of mushroom soup
- ½ cup milk
- 1 cup shredded cheddar cheese, divided
- Optional: ½ cup breadcrumbs or panko for a crunchy topping
Instructions
- 1. Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- 2. In a large skillet, cook ground beef until browned. Drain fat. Add onion and cook until softened.
- 3. Stir in garlic, salt, and pepper. Cook 1 minute until fragrant.
- 4. Pour in tomato sauce, add Italian seasoning. Simmer 5 minutes.
- 5. Prepare zucchini (slice or dice).
- 6. In a medium bowl, combine condensed soup and milk until smooth.
- 7. Stir ½ cup shredded cheddar cheese into the soup mixture.
- 8. Layer half the zucchini in the baking dish.
- 9. Spoon half the beef mixture over the zucchini.
- 10. Pour half the cheesy soup mixture over the beef.
- 11. Repeat layers with remaining zucchini, beef, and soup mixture.
- 12. Sprinkle with optional breadcrumbs.
- 13. Top with remaining ½ cup cheddar cheese.
- 14. Cover with foil and bake for 30 minutes.
- 15. Remove foil and bake for 15-20 minutes more, until bubbly and golden.
- 16. Let rest 5-10 minutes before serving.
Notes
Store cooled casserole in an airtight container in the refrigerator for up to 3-4 days. To freeze, wrap tightly and freeze for up to 2-3 months. Reheat in the oven at 350°F (175°C) until heated through.
