Description

Ingredients

  • 1 tablespoon olive oil
  • 1 pound smoked sausage (like andouille or kielbasa), sliced into ½-inch rounds
  • 1 large yellow onion, chopped
  • 2 bell peppers (any color), chopped
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • ¼ teaspoon cayenne pepper (optional)
  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (14.5-ounce) can diced tomatoes, undrained
  • 1 ½ cups chicken broth (or vegetable broth)
  • 1 bay leaf
  • 1 ½ cups cooked white rice
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro or parsley, chopped, for garnish (optional)
  • Hot sauce, for serving (optional)

Instructions

  1. 1. Heat olive oil in a large skillet or Dutch oven over medium-high heat. Add sausage and cook until browned, about 5-7 minutes. Remove sausage and set aside.
  2. 2. Add onion and bell peppers to the skillet. Cook until softened, about 5-7 minutes.
  3. 3. Stir in garlic, oregano, thyme, and cayenne (if using). Cook for 1 minute until fragrant.
  4. 4. Add black beans, diced tomatoes (with juice), chicken broth, and bay leaf. Bring to a simmer, scraping up brown bits.
  5. 5. Return sausage to the skillet. Stir.
  6. 6. Reduce heat to low, cover, and simmer for at least 15-20 minutes for flavors to meld.
  7. 7. While simmering, prepare white rice according to package directions.
  8. 8. Remove and discard bay leaf. Stir in cooked white rice.
  9. 9. Season with salt and pepper to taste.
  10. 10. Serve hot, garnished with cilantro or parsley, and hot sauce on the side if desired.

Notes

Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat on the stovetop with a splash of water or broth, or in the microwave.
