A hearty, creamy casserole with ground beef, egg noodles, and melted cheese that’s comfort food at its finest
Ingredients

- 1 pound ground beef (80/20 blend)
- 12 ounces wide egg noodles
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes, drained
- 8 ounces cream cheese, softened
- 1 cup sour cream
- 1 cup beef broth
- 2 cups shredded cheddar cheese, divided
- 1 cup frozen corn kernels
- 2 tablespoons tomato paste
- 2 teaspoons Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon paprika
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper to taste
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- 1/4 cup panko breadcrumbs (optional)
Instructions
- 1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
- 2. Cook egg noodles according to package directions until al dente. Drain and set aside.
- 3. Heat olive oil in a large skillet over medium-high heat. Add onion and cook 3-4 minutes until softened.
- 4. Add garlic and cook 30 seconds until fragrant.
- 5. Add ground beef and cook 6-8 minutes until browned, breaking up with wooden spoon.
- 6. Stir in tomato paste and cook 1 minute.
- 7. Add diced tomatoes, oregano, paprika, garlic powder, onion powder, salt, and pepper. Cook 2-3 minutes.
- 8. Pour in beef broth and Worcestershire sauce. Simmer 5 minutes.
- 9. Remove from heat and stir in cream cheese until melted.
- 10. Add sour cream and mix until combined.
- 11. Fold in cooked noodles, corn, and 1 cup cheddar cheese.
- 12. Transfer to prepared baking dish and top with remaining cheese and breadcrumbs.
- 13. Cover with foil and bake 25 minutes.
- 14. Remove foil and bake 10-15 minutes more until bubbly.
- 15. Rest 5 minutes before serving. Garnish with parsley.
Notes
Store leftovers in refrigerator up to 4 days. Can be frozen for up to 3 months. Add splash of broth when reheating if needed.
