Description

A hearty, creamy casserole with ground beef, egg noodles, and melted cheese that’s comfort food at its finest


Ingredients

  • 1 pound ground beef (80/20 blend)
  • 12 ounces wide egg noodles
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 8 ounces cream cheese, softened
  • 1 cup sour cream
  • 1 cup beef broth
  • 2 cups shredded cheddar cheese, divided
  • 1 cup frozen corn kernels
  • 2 tablespoons tomato paste
  • 2 teaspoons Worcestershire sauce
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 2 tablespoons olive oil
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup panko breadcrumbs (optional)

Instructions

  1. 1. Preheat oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. 2. Cook egg noodles according to package directions until al dente. Drain and set aside.
  3. 3. Heat olive oil in a large skillet over medium-high heat. Add onion and cook 3-4 minutes until softened.
  4. 4. Add garlic and cook 30 seconds until fragrant.
  5. 5. Add ground beef and cook 6-8 minutes until browned, breaking up with wooden spoon.
  6. 6. Stir in tomato paste and cook 1 minute.
  7. 7. Add diced tomatoes, oregano, paprika, garlic powder, onion powder, salt, and pepper. Cook 2-3 minutes.
  8. 8. Pour in beef broth and Worcestershire sauce. Simmer 5 minutes.
  9. 9. Remove from heat and stir in cream cheese until melted.
  10. 10. Add sour cream and mix until combined.
  11. 11. Fold in cooked noodles, corn, and 1 cup cheddar cheese.
  12. 12. Transfer to prepared baking dish and top with remaining cheese and breadcrumbs.
  13. 13. Cover with foil and bake 25 minutes.
  14. 14. Remove foil and bake 10-15 minutes more until bubbly.
  15. 15. Rest 5 minutes before serving. Garnish with parsley.

Notes

Store leftovers in refrigerator up to 4 days. Can be frozen for up to 3 months. Add splash of broth when reheating if needed.
