Description

A hearty layered casserole with seasoned ground beef, egg noodles, and three types of cheese


Ingredients

  • 1 pound ground beef (80/20)
  • 8 ounces wide egg noodles
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) diced tomatoes, drained
  • 1 can (8 oz) tomato sauce
  • 1 tablespoon tomato paste
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1 cup cottage cheese
  • 3 green onions, chopped
  • 2 cups shredded sharp cheddar cheese, divided
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. 1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
  2. 2. Cook egg noodles according to package directions until just tender. Drain and set aside.
  3. 3. Brown ground beef in large skillet over medium-high heat, 5-7 minutes.
  4. 4. Add onion to beef and cook 3-4 minutes until softened.
  5. 5. Stir in garlic and cook 30 seconds until fragrant.
  6. 6. Add tomatoes, tomato sauce, tomato paste, Italian seasoning, oregano, salt, pepper, and red pepper flakes. Stir well.
  7. 7. Simmer 8-10 minutes until sauce thickens slightly.
  8. 8. In medium bowl, combine cream cheese, sour cream, and cottage cheese until smooth.
  9. 9. Stir green onions and 1 cup cheddar cheese into cheese mixture.
  10. 10. Layer half the noodles in prepared baking dish.
  11. 11. Spread cheese mixture over noodles evenly.
  12. 12. Add remaining noodles as next layer.
  13. 13. Top with beef mixture, spreading to cover noodles.
  14. 14. Sprinkle remaining cheddar and all mozzarella cheese on top.
  15. 15. Cover with foil and bake 25 minutes.
  16. 16. Remove foil and bake 15-20 minutes until cheese is golden.
  17. 17. Rest 10 minutes before serving.
  18. 18. Garnish with fresh parsley.

Notes

Store covered in refrigerator up to 4 days. Can be frozen up to 3 months before baking.
