  • 2 tablespoons olive oil
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon honey
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt and freshly ground black pepper to taste
  • Chopped fresh chives or green onions (for garnish, optional)
  • Sesame seeds (for garnish, optional)

Instructions

  1. 1. Pat the salmon cubes thoroughly dry with paper towels and season with salt and pepper.
  2. 2. In a bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, honey, garlic powder, and onion powder until smooth. Adjust seasoning as needed.
  3. 3. Heat olive oil in a large skillet over medium-high heat. Add salmon cubes in a single layer (cook in batches if necessary) and sear for 2-3 minutes per side until golden brown and crispy.
  4. 4. Reduce heat to low. Pour about half of the prepared sauce over the salmon and gently toss to coat. Cook for 30-60 seconds, just until sauce is warmed through and clings to the salmon.
  5. 5. Transfer to a serving dish, drizzle with remaining sauce or serve on the side. Garnish with chives/green onions and sesame seeds if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 2-3 days, preferably with minimal sauce. Gently reheat in a skillet over low heat or in a low oven (300°F/150°C) to preserve texture.
