Description

A speedy and flavorful weeknight meal featuring tender chicken coated in a creamy, spicy sriracha sauce, served over rice with crisp vegetables.


Ingredients

  • 1 pound boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
  • 1 tablespoon olive oil or vegetable oil
  • 1 (10.5 ounce) can Campbell’s Cream of Chicken Soup
  • 1/2 cup mayonnaise
  • 1/4 cup sriracha, or more or less to taste
  • 1 tablespoon soy sauce
  • 1 teaspoon honey (optional, for a touch of sweetness)
  • 1/4 teaspoon garlic powder (optional, for extra flavor)
  • 4 cups cooked rice (white, brown, or jasmine all work well)
  • 1 cup broccoli florets, blanched or steamed until tender-crisp
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions, for garnish
  • Sesame seeds, for garnish (optional)

Instructions

  1. 1. Heat the olive oil or vegetable oil in a large skillet over medium-high heat. Add the chicken pieces and cook, stirring occasionally, until browned on all sides and cooked through. Remove the chicken from the skillet and set aside.
  2. 2. Reduce the heat of the same skillet to medium-low. Add the Campbell’s Cream of Chicken Soup, mayonnaise, sriracha, soy sauce, honey (if using), and garlic powder (if using). Stir until well combined and smooth.
  3. 3. Return the cooked chicken to the skillet with the sauce. Stir to coat the chicken evenly. Let it simmer gently for 2-3 minutes, allowing the flavors to meld. Add a tablespoon or two of water or milk if the sauce is too thick.
  4. 4. Divide the cooked rice among four bowls. Top with the Bang Bang chicken and sauce mixture.
  5. 5. Arrange the broccoli florets and shredded carrots around the chicken. Garnish with chopped green onions and sesame seeds, if desired. Serve immediately.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat or in the microwave. Avoid overheating.
