Description
A simple and delicious weeknight meal featuring tender balsamic-marinated chicken breast topped with melted mozzarella cheese. Easy to prepare and always a crowd-pleaser.

- 2 boneless, skinless chicken breasts (about 6–8 ounces each)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 1 tablespoon Dijon mustard
- 2 cloves garlic, minced
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon salt, or to taste
- 1/4 teaspoon black pepper, or to taste
- 4 ounces fresh mozzarella cheese, thinly sliced or shredded
- Fresh basil leaves, for garnish (optional)
Instructions
- 1. Preheat oven to 400°F (200°C). Grease a baking dish.
- 2. Whisk balsamic vinegar, olive oil, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper in a bowl.
- 3. Place chicken breasts in the baking dish. Spoon half the balsamic mixture over the chicken and let marinate for 15-30 minutes.
- 4. Pour remaining balsamic mixture over the chicken.
- 5. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
- 6. Arrange mozzarella slices or shredded mozzarella over the chicken.
- 7. Return to oven for 5-7 minutes, until cheese is melted and bubbly.
- 8. Let chicken rest for 5 minutes before serving. Garnish with basil if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the oven or on the stovetop to maintain moisture.
