Description

Ingredients

  • 2 boneless, skinless chicken breasts (about 68 ounces each)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 1 tablespoon Dijon mustard
  • 2 cloves garlic, minced
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt, or to taste
  • 1/4 teaspoon black pepper, or to taste
  • 4 ounces fresh mozzarella cheese, thinly sliced or shredded
  • Fresh basil leaves, for garnish (optional)

Instructions

  1. 1. Preheat oven to 400°F (200°C). Grease a baking dish.
  2. 2. Whisk balsamic vinegar, olive oil, Dijon mustard, minced garlic, Italian seasoning, salt, and pepper in a bowl.
  3. 3. Place chicken breasts in the baking dish. Spoon half the balsamic mixture over the chicken and let marinate for 15-30 minutes.
  4. 4. Pour remaining balsamic mixture over the chicken.
  5. 5. Bake for 20-25 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  6. 6. Arrange mozzarella slices or shredded mozzarella over the chicken.
  7. 7. Return to oven for 5-7 minutes, until cheese is melted and bubbly.
  8. 8. Let chicken rest for 5 minutes before serving. Garnish with basil if desired.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in the oven or on the stovetop to maintain moisture.
