Description

Fresh, flavorful ground beef cooked in aromatic Asian seasonings and served in crisp lettuce cups for a satisfying, healthy meal.


Ingredients

  • 1 pound ground beef (80/20 blend)
  • 1 large head butter lettuce or Boston lettuce
  • 2 tablespoons vegetable oil
  • 1 medium yellow onion, finely diced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon brown sugar
  • 1/2 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced thin
  • 1 tablespoon sesame seeds
  • 1/4 cup fresh cilantro, chopped
  • 1 medium carrot, finely diced
  • 1/2 cup water chestnuts, diced

Instructions

  1. 1. Wash and dry lettuce leaves, arrange on platter and refrigerate.
  2. 2. Heat vegetable oil in large skillet over medium-high heat. Add onion and cook 3-4 minutes.
  3. 3. Add garlic and ginger, stirring constantly for 30 seconds until fragrant.
  4. 4. Increase heat to high, add ground beef and cook 5-7 minutes until browned.
  5. 5. Add diced carrot and cook 2-3 minutes until slightly softened.
  6. 6. Whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, and red pepper flakes.
  7. 7. Pour sauce over beef mixture and cook 2-3 minutes until reduced.
  8. 8. Add water chestnuts and cook 1 minute to warm through.
  9. 9. Remove from heat and stir in half of green onions and cilantro.
  10. 10. Taste and adjust seasoning as needed.
  11. 11. Transfer to serving bowl and garnish with remaining herbs and sesame seeds.
  12. 12. Serve immediately with chilled lettuce cups.

Notes

Store leftover beef mixture up to 3 days refrigerated. Reheat in skillet over medium heat with splash of water if needed.
