Description
Fresh, flavorful ground beef cooked in aromatic Asian seasonings and served in crisp lettuce cups for a satisfying, healthy meal.

- 1 pound ground beef (80/20 blend)
- 1 large head butter lettuce or Boston lettuce
- 2 tablespoons vegetable oil
- 1 medium yellow onion, finely diced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, grated
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon rice vinegar
- 1 teaspoon brown sugar
- 1/2 teaspoon red pepper flakes (optional)
- 2 green onions, sliced thin
- 1 tablespoon sesame seeds
- 1/4 cup fresh cilantro, chopped
- 1 medium carrot, finely diced
- 1/2 cup water chestnuts, diced
Instructions
- 1. Wash and dry lettuce leaves, arrange on platter and refrigerate.
- 2. Heat vegetable oil in large skillet over medium-high heat. Add onion and cook 3-4 minutes.
- 3. Add garlic and ginger, stirring constantly for 30 seconds until fragrant.
- 4. Increase heat to high, add ground beef and cook 5-7 minutes until browned.
- 5. Add diced carrot and cook 2-3 minutes until slightly softened.
- 6. Whisk together soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, and red pepper flakes.
- 7. Pour sauce over beef mixture and cook 2-3 minutes until reduced.
- 8. Add water chestnuts and cook 1 minute to warm through.
- 9. Remove from heat and stir in half of green onions and cilantro.
- 10. Taste and adjust seasoning as needed.
- 11. Transfer to serving bowl and garnish with remaining herbs and sesame seeds.
- 12. Serve immediately with chilled lettuce cups.
Notes
Store leftover beef mixture up to 3 days refrigerated. Reheat in skillet over medium heat with splash of water if needed.
