- 1.5 pounds boneless, skinless chicken thighs or breasts, cut into bite-sized pieces
- 2 cups long-grain white rice, uncooked
- 4 cups chicken broth
- 1 large cucumber, peeled, seeded, and finely diced
- 1 cup plain Greek yogurt
- 1/4 cup fresh dill, chopped
- 1/4 cup fresh mint, chopped
- 2 cloves garlic, minced
- 2 tablespoons fresh lemon juice
- 1 teaspoon dried oregano
- 1/2 teaspoon salt, plus more to taste
- 1/4 teaspoon black pepper, plus more to taste
- 2 tablespoons olive oil
- Optional: 1/4 cup crumbled feta cheese
- Optional: Kalamata olives, pitted and halved
Instructions
- 1. Preheat your oven to 375°F (190°C).
- 2. In a medium bowl, combine Greek yogurt, diced cucumber, dill, mint, garlic, lemon juice, oregano, 1/2 tsp salt, and 1/4 tsp pepper. Stir well and set aside.
- 3. In a 9×13 inch baking dish, spread the uncooked rice evenly across the bottom.
- 4. Arrange the chicken pieces evenly over the rice. Drizzle with olive oil if desired.
- 5. Pour chicken broth over the rice and chicken, ensuring all rice is submerged.
- 6. Tightly cover the baking dish with aluminum foil and bake for 30 minutes.
- 7. Carefully remove the foil. Spoon the prepared tzatziki sauce evenly over the chicken and rice.
- 8. Re-cover with foil and bake for another 20-25 minutes, or until rice is cooked and chicken is done (165°F/74°C). Remove foil for the last 5-10 minutes if a crispier topping is desired.
- 9. Let rest, covered loosely with foil, for 5-10 minutes before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the oven at 350°F (175°C) covered with foil, or in the microwave by stirring halfway through.
