Ingredients

  • 1 large yellow onion, chopped
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground turmeric
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon ground cumin
  • Pinch of cayenne pepper (optional, for a touch of heat)
  • 1 cup dried red lentils, rinsed
  • 6 cups vegetable broth
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • Juice of 1/2 lemon
  • Fresh parsley or cilantro, chopped, for garnish

Instructions

  1. 1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the chopped onion, carrots, and celery. Cook, stirring occasionally, until the vegetables have softened, about 8-10 minutes.
  2. 2. Stir in the minced garlic, ground turmeric, ground ginger, ground cumin, and cayenne pepper (if using). Cook for another minute until fragrant.
  3. 3. Add the rinsed red lentils, vegetable broth, and diced tomatoes to the pot. Stir to combine.
  4. 4. Bring the soup to a boil, then reduce the heat to low, cover, and simmer for 25-30 minutes, or until the lentils are tender and have broken down.
  5. 5. Season the soup with salt and black pepper to taste.
  6. 6. Stir in the fresh lemon juice just before serving.
  7. 7. Ladle the soup into bowls and garnish with fresh chopped parsley or cilantro.

Notes
