- 1 teaspoon black pepper
- 1 teaspoon paprika
- 1 teaspoon garlic powder

- 2 large eggs
- 1/4 cup milk
- 1 cup panko breadcrumbs
- Olive oil or neutral cooking oil, for frying
- For the Bang Bang Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons sriracha
- 1 tablespoon sweet chili sauce
- 1 tablespoon honey
- 1 teaspoon rice vinegar
- 1/2 teaspoon garlic powder
- 1/2 teaspoon grated fresh ginger
- Juice of 1/2 lime
- For Garnish (optional):
- Chopped fresh chives or green onions
- Sesame seeds
Instructions
- 1. Prepare the Salmon: Pat dry, remove skin, and cut into 1-inch cubes.
- 2. Set Up Breading Stations:
- – Dish 1: Flour, salt, pepper, paprika, garlic powder, cayenne.
- – Dish 2: Eggs and milk, whisked.
- – Dish 3: Panko breadcrumbs.
- 3. Bread the Salmon: Dredge each salmon piece in flour, then egg wash, then panko breadcrumbs, pressing to coat. Place on a plate.
- 4. Prepare the Bang Bang Sauce: Whisk together mayonnaise, sriracha, sweet chili sauce, honey, rice vinegar, garlic powder, ginger, and lime juice in a bowl. Adjust seasoning to taste.
- 5. Fry the Salmon Bites: Heat 1/2 inch of oil in a skillet over medium-high heat. Fry salmon bites in batches for 2-3 minutes per side until golden brown and cooked through.
- 6. Drain and Sauce: Remove fried bites with a slotted spoon and drain on paper towels. Gently toss the warm bites in the Bang Bang sauce until evenly coated.
- 7. Serve: Arrange on a platter, garnish with chives/green onions and sesame seeds if desired, and serve immediately.
Notes
Store leftovers in an airtight container in the refrigerator for 1-2 days. Reheat in an air fryer or oven for best crispiness. Avoid microwaving. Sauce separately if possible before reheating.
