Description
Easy and delicious baked buffalo chicken bites with a crispy coating. A great appetizer for game day or parties.
Ingredients

- 1.5 pounds boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
- 1/4 cup all-purpose flour
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
- 1 large egg, beaten
- 1/2 cup panko breadcrumbs
- 1/4 cup unsalted butter, melted
- 1/2 cup your favorite buffalo wing sauce (or more, to taste)
- Optional: A splash of Frank’s RedHot sauce for extra heat.
Instructions
- 1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- 2. Whisk flour, paprika, garlic powder, pepper, and salt in a bowl. Beat egg in another. Place panko in a third bowl.
- 3. Toss chicken in flour mixture, then egg, then panko, coating well.
- 4. Arrange chicken on baking sheet in a single layer. Bake for 15-20 minutes until golden and cooked through.
- 5. Melt butter and stir in buffalo sauce. Heat gently.
- 6. Transfer baked chicken to a bowl, pour warm sauce over, and toss to coat.
- 7. Return to baking sheet and bake for an additional 5 minutes until sauce is glossy.
Notes
Store cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in a preheated oven at 350°F (175°C) for 8-10 minutes until crisped.
