Description

A filling crockpot soup featuring browned meat, tender vegetables, and a rich broth, perfect for busy weeknights.


Ingredients

  • 1 lb ground beef or turkey
  • 1 cup diced onions
  • 2 cloves garlic, minced
  • 3 carrots, sliced
  • 2 celery stalks, sliced
  • 2 potatoes, diced
  • 1 can diced tomatoes (14.5 oz)
  • 4 cups beef or vegetable broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • Crusty bread for serving

Instructions

  1. Brown the ground meat with onions and garlic until the onions become translucent and the meat is cooked through. Drain the fat and transfer the mixture to the crockpot.
  2. Add the carrots, celery, potatoes, diced tomatoes, broth, Worcestershire sauce, thyme, basil, salt, and pepper to the crockpot. Stir to combine all the ingredients thoroughly.
  3. Cover and cook on low for 360 minutes or high for 240 minutes, until the vegetables are tender.
  4. Serve hot with crusty bread for dipping, complementing the soup’s flavors.

Notes

Ensure to brown the meat adequately for the best flavor. Add a cornstarch slurry if you prefer a thicker soup.
