- 1 lb ground beef or turkey
- 1 cup diced onions
- 2 cloves garlic, minced
- 3 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 1 can diced tomatoes (14.5 oz)
- 4 cups beef or vegetable broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- Salt and pepper to taste
- Crusty bread for serving
Instructions
- Brown the ground meat with onions and garlic until the onions become translucent and the meat is cooked through. Drain the fat and transfer the mixture to the crockpot.
- Add the carrots, celery, potatoes, diced tomatoes, broth, Worcestershire sauce, thyme, basil, salt, and pepper to the crockpot. Stir to combine all the ingredients thoroughly.
- Cover and cook on low for 360 minutes or high for 240 minutes, until the vegetables are tender.
- Serve hot with crusty bread for dipping, complementing the soup’s flavors.
Notes
Ensure to brown the meat adequately for the best flavor. Add a cornstarch slurry if you prefer a thicker soup.
