- 8 boneless skinless chicken breast cutlets (3 ounces each)
- 2 teaspoons Italian herb blend
- 1 teaspoon garlic powder
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1 tablespoon olive oil
- 1 tablespoon salted butter
- 1/2 cup grated parmesan cheese
- 1 1/2 cups homemade marinara or store-bought
- 1 cup shredded mozzarella cheese
- 6 to 8 leaves of fresh basil, thinly sliced
Instructions
- Preheat your oven to 450 degrees F.
- Season the chicken on both sides with the Italian herb blend, garlic powder, kosher salt, and black pepper.
- Heat a large sauté pan over medium heat, add olive oil and salted butter, and cook the chicken in batches for 2 to 3 minutes per side until golden brown and cooked through.
- Place the chicken on a rimmed baking sheet, sprinkle with parmesan cheese, top with marinara sauce, and finish with mozzarella cheese.
- Bake for 6 to 8 minutes or until the cheese is melted and bubbly. If you like your cheese a bit crispier, switch to broil for the last minute.
- Remove from the oven, sprinkle with more parmesan cheese and fresh basil. Serve hot and enjoy.
Notes
Make sure to properly season your chicken for full flavor. Avoid undercooking by using a meat thermometer; chicken should register at 165 degrees F.
