- 1 cup cooked rice or quinoa
- 1 cucumber, diced
- 1 cup cherry tomatoes, halved
- 1 bell pepper, diced
- 1/4 red onion, thinly sliced
- 1/2 cup feta cheese, crumbled
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon dried oregano
- Salt and pepper to taste
- For Tzatziki Sauce:
- 1/2 cup Greek yogurt
- 1/2 cucumber, grated and drained
- 1 tablespoon lemon juice
- 1 garlic clove, minced
- Salt to taste
Instructions
- In a bowl, mix olive oil, lemon juice, oregano, salt, and pepper. Marinate the chicken breasts in this mixture for at least 30 minutes.
- Grill the chicken over medium heat until cooked through, about 6-7 minutes per side.
- Let it rest for a few minutes before slicing to maintain juiciness.
- Prepare the tzatziki sauce by mixing the Greek yogurt, grated cucumber, lemon juice, garlic, and salt in a bowl.
- Assemble the bowls with rice or quinoa, sliced grilled chicken, veggies, feta cheese, and tzatziki sauce on top.
- Serve and enjoy!
