Description
Seasoned black beans cooked until crispy on the edges and creamy inside, served in warm tortillas with fresh toppings. A satisfying vegetarian meal that’s easily made vegan.

- 2 cans (15 oz each) black beans, drained and rinsed
- 2 tablespoons olive oil
- 1 medium yellow onion, diced
- 3 cloves garlic, minced
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1/2 teaspoon chili powder
- 1/2 teaspoon oregano
- 1/4 teaspoon cayenne pepper (optional)
- 1 teaspoon salt, or to taste
- 1/2 teaspoon black pepper
- 2 tablespoons tomato paste
- 1/4 cup vegetable broth or water
- 1 tablespoon lime juice
- 8 corn or flour tortillas
- 1 cup shredded lettuce or cabbage
- 1 medium tomato, diced
- 1/2 red onion, thinly sliced
- 1 avocado, sliced
- 1/4 cup fresh cilantro, chopped
- Lime wedges for serving
- Hot sauce (optional)
Instructions
- 1. Heat olive oil in a large skillet over medium heat. Cook diced onion for 4-5 minutes until softened.
- 2. Add minced garlic and cook for 30 seconds until fragrant.
- 3. Stir in cumin, smoked paprika, chili powder, oregano, and cayenne. Cook spices for 30 seconds.
- 4. Add tomato paste and cook for 1-2 minutes until darkened.
- 5. Add black beans, salt, and pepper, stirring to coat evenly.
- 6. Add vegetable broth and simmer for 8-10 minutes until liquid evaporates.
- 7. Increase heat to medium-high and cook 3-5 minutes more, stirring less frequently to develop crispy edges.
- 8. Remove from heat and stir in lime juice. Taste and adjust seasoning.
- 9. Warm tortillas in a dry skillet until heated through.
- 10. Assemble tacos with bean mixture and desired toppings.
- 11. Serve immediately with lime wedges and hot sauce.
Notes
Store leftover bean filling in refrigerator for up to 4 days. Reheat in skillet over medium heat. For vegan version, skip dairy toppings and use nutritional yeast.
