- 2 large boneless, skinless chicken breasts
- 1 cup Panko breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1 teaspoon dried Italian seasoning
- 1/2 teaspoon garlic powder
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 2 large eggs
- 1 tablespoon milk or water
- 2 tablespoons olive oil or avocado oil, divided
- 1 cup marinara sauce
- 4 ounces fresh mozzarella cheese, sliced or shredded
- 2 tablespoons chopped fresh parsley, for garnish (optional)
- 4 servings cooked pasta, for serving (optional)
Instructions
- 1. Prepare chicken by halving or pounding to 1/2 inch thickness.
- 2. Set up three shallow dishes: one with Panko, Parmesan, seasonings, salt, and pepper; one with whisked eggs and milk/water; and one clean dish for breaded chicken.
- 3. Dredge chicken in egg wash, then press firmly into the Panko mixture.
- 4. Preheat air fryer to 400°F (200°C). Lightly spray basket with oil.
- 5. Place breaded chicken in a single layer in the air fryer basket. Lightly brush or spray tops with oil.
- 6. Air fry for 10-12 minutes, flipping halfway through, until cooked through and golden.
- 7. Spoon marinara sauce over chicken, top with mozzarella cheese.
- 8. Return to air fryer for 2-3 minutes until cheese is melted and bubbly.
- 9. Let rest briefly, garnish with parsley if desired, and serve.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the air fryer at 370°F (185°C) for 4-6 minutes for best crispiness.
