- 1 onion, diced
- 1 cup diced green chiles (fresh, canned, or roasted)
- 2 tsp salt (adjust to taste)
- 1 tbsp ground cumin
- 8 cups broth (chicken, beef, or vegetarian)
- 4 russet potatoes, peeled and diced
- 1 cup diced tomatoes (fresh or canned)
Instructions
- Brown the ground beef in a large pot over medium heat, breaking it apart until fully cooked, about 5-7 minutes.
- Add the diced onion and sauté until translucent, approximately 3 minutes.
- Stir in the ground cumin and salt, allowing the spices to bloom for about a minute.
- Pour in the broth and bring to a simmer, scraping any fond from the bottom.
- Add the diced potatoes and bring back to a simmer. Cook until tender, about 15-20 minutes.
- Stir in the diced tomatoes and green chiles, cooking for an additional 5 minutes before serving.
Notes
Use freshly diced ingredients for the best taste. Adjust seasoning as necessary.
