Ingredients

  • 1 lb ground beef (lean)
  • 1 onion, diced
  • 1 cup diced green chiles (fresh, canned, or roasted)
  • 2 tsp salt (adjust to taste)
  • 1 tbsp ground cumin
  • 8 cups broth (chicken, beef, or vegetarian)
  • 4 russet potatoes, peeled and diced
  • 1 cup diced tomatoes (fresh or canned)

Instructions

  1. Brown the ground beef in a large pot over medium heat, breaking it apart until fully cooked, about 5-7 minutes.
  2. Add the diced onion and sauté until translucent, approximately 3 minutes.
  3. Stir in the ground cumin and salt, allowing the spices to bloom for about a minute.
  4. Pour in the broth and bring to a simmer, scraping any fond from the bottom.
  5. Add the diced potatoes and bring back to a simmer. Cook until tender, about 15-20 minutes.
  6. Stir in the diced tomatoes and green chiles, cooking for an additional 5 minutes before serving.

Notes
