- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 8 ounces pasta (such as fettuccine, linguine, or penne)
- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon red pepper flakes (optional)
- 1 cup low-sodium chicken broth
- 1/2 cup heavy cream (or half-and-half, or full-fat Greek yogurt)
- 1/2 cup grated Parmesan cheese, plus more for serving
- 1/4 cup chopped fresh parsley, plus more for garnish
- Salt and freshly ground black pepper to taste
Instructions
- 1. Cook pasta in salted boiling water until al dente. Reserve 1 cup pasta water, then drain.
- 2. Season chicken with salt and pepper. Heat olive oil in a skillet over medium-high heat. Sear chicken until browned and cooked through. Remove from skillet and set aside.
- 3. Reduce heat to medium. Add minced garlic and red pepper flakes (if using) to the skillet and sauté for 1 minute until fragrant.
- 4. Pour in chicken broth, scraping up browned bits. Simmer for 2-3 minutes to reduce slightly.
- 5. Stir in heavy cream (or alternative) and bring to a gentle simmer.
- 6. Gradually whisk in grated Parmesan cheese until melted and smooth. Stir in chopped parsley. Season with salt and pepper. Add reserved pasta water if sauce is too thick.
- 7. Add cooked pasta and seared chicken back to the skillet. Toss to coat.
- 8. Serve immediately, garnished with extra Parmesan and parsley.
Notes
Store completely cooled leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop with a splash of liquid, or in the microwave on medium power, stirring occasionally.
