Description

A comforting and filling creamy chicken noodle soup that’s easy to make on weeknights.


Ingredients

Scale
  • 2 sticks celery (chopped finely)
  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 3 cloves garlic (minced)
  • 1/4 cup flour
  • 4 cups chicken broth
  • 1.5 pounds uncooked chicken breasts
  • 1/4 teaspoon Italian seasoning
  • 1 cup heavy/whipping cream
  • 2 generous cups uncooked egg noodles
  • Salt & pepper (to taste)
  • 1 tablespoon fresh parsley (chopped)

Instructions

  1. In a large soup pot, heat the olive oil and butter over medium-high heat until bubbling.
  2. Toss in the celery, carrots, and onion, sautéing for about 5-7 minutes until they become tender and aromatic.
  3. Stir in the minced garlic and cook for an additional 30 seconds until fragrant.
  4. Sprinkle in the flour, stirring continuously for about a minute until it forms a paste.
  5. Gradually pour in the chicken broth while stirring to prevent lumps until the flour dissolves.
  6. Add the uncooked chicken breasts and the Italian seasoning, then raise the heat to bring the mixture to a gentle boil.
  7. Once bubbling, reduce the heat and let it simmer gently for 10 minutes to cook the chicken through.
  8. Incorporate the uncooked egg noodles, cover the pot but leave the lid slightly ajar, and let cook for an additional 8-10 minutes until the noodles are tender.
  9. Remove the chicken from the pot, chop it into bite-sized pieces, and return to the soup.
  10. Season to taste with salt and pepper and stir in the fresh parsley before serving right away.

Notes

Ensure ingredients are uniformly chopped for even cooking. If the soup becomes thick, add more chicken broth or water to adjust consistency.
