Description
A hearty and flavorful dish made with soaking dried red beans, sautéed vegetables, and spices, served over fluffy white rice.

- 1 cup dried red beans, rinsed and sorted
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1 teaspoon cumin
- ¼ teaspoon liquid smoke
- 2 cups vegetable broth
- Salt and pepper to taste
- White rice, for serving
Instructions
- Rinse the dried red beans and soak them in cold water overnight, covering by at least 2 inches.
- Drain and rinse the soaked beans.
- Heat olive oil in a large pot over medium heat.
- Add the diced onion and bell pepper, and sauté for 5 to 7 minutes until soft and translucent.
- Add the minced garlic in the last 30 to 60 seconds.
- Stir in the smoked paprika and cumin, cooking for 1 minute.
- Add the soaked beans and vegetable broth, bringing to a boil.
- Reduce the heat to low, cover, and simmer for 1 to 1.5 hours until the beans are tender.
- Stir in liquid smoke and season with salt and pepper after tasting.
- Mash about half a cup of beans and stir back into the pot to thicken the broth.
- Serve over white rice.
Notes
Soak beans overnight for the best texture and flavor. Add a splash of lime juice for a fresh twist before serving.
