Description

A hearty and flavorful dish with tender red beans and spicy andouille sausage, perfect for meal prep on busy weeks.


Ingredients

  • 1 pound red beans
  • 1 pound andouille sausage, sliced
  • 1 onion, diced
  • 1 bell pepper, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 bay leaf
  • Salt and pepper to taste
  • Cooked rice for serving
  • Chopped green onions for garnish

Instructions

  1. Rinse the red beans and soak them overnight or for at least 4 hours.
  2. Set the Instant Pot to ‘Sauté’ mode and add andouille sausage, cooking until browned (5-7 minutes).
  3. Add onion, bell pepper, celery, and garlic to the pot and sauté until softened (3-5 minutes).
  4. Stir in the soaked beans, chicken broth, Cajun seasoning, and bay leaf.
  5. Close the lid, set the pressure to high, and cook for 40 minutes.
  6. Let the pressure release naturally for 10 minutes, then quickly release any remaining pressure.
  7. Adjust seasoning with salt and pepper, serve over cooked rice, and garnish with green onions.

Notes

Soaking the beans is key to achieving the right texture. Store leftovers in an airtight container for up to 3 days.
