- 4 boneless, skinless chicken breasts
- 1 cup cherry tomatoes, halved
- 1 cup spinach, chopped
- 1 cup mozzarella cheese, shredded
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C). The oven should feel fully up to temp before the dish goes in.
- Heat olive oil over medium heat in a large skillet. Add garlic and sauté until fragrant, about 30-45 seconds.
- Season the chicken breasts with salt, pepper, and Italian seasoning. Add to the skillet and sear until golden brown on both sides, about 3 minutes per side.
- Transfer the chicken to a baking dish and layer with spinach, cherry tomatoes, mozzarella, and Parmesan cheese.
- Cover with foil and bake for 25-30 minutes or until the chicken is cooked through.
- Remove the foil and bake for an additional 5-10 minutes until the cheese is bubbly and golden.
- Serve warm and let rest for 5 minutes before cutting.
Notes
Serve over brown rice or quinoa, add a green salad, or toasted bread on the side for a complete meal.
