Ingredients
- 4 boneless, skinless chicken breasts or 6-8 boneless, skinless chicken thighs (approx. 1.5 – 2 lbs)
- 8 ounces feta cheese, crumbled
- 1/2 cup honey
- 1–2 tablespoons hot sauce (e.g., Sriracha, Tabasco)
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- Pinch of salt (optional)
- Fresh parsley or cilantro, chopped (for garnish, optional)
Instructions
- 1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
- 2. In a medium bowl, combine crumbled feta, minced garlic, olive oil, dried oregano, and black pepper. Stir until forming a paste.
- 3. Pat chicken dry with paper towels. Place in the baking dish and spoon the feta mixture over the top of each piece, spreading evenly.
- 4. In a small bowl, whisk together honey and hot sauce. Microwave for 10-15 seconds if honey is thick.
- 5. Bake chicken for 20-25 minutes for breasts or 25-30 minutes for thighs, or until cooked through (internal temperature 165°F/74°C).
- 6. Remove from oven and drizzle the hot honey mixture generously over the chicken and feta.
- 7. Optional: Broil for 1-2 minutes, watching carefully, for extra caramelization.
- 8. Let chicken rest for 5-10 minutes before serving. Garnish with fresh herbs and extra feta if desired.
