- 1 pound ground beef (80/20 blend)
- 1 can (19 oz) red enchilada sauce, divided
- 8–10 flour tortillas (8-inch size)
- 2 cups Mexican cheese blend, shredded
- 1 small onion, diced (optional)
Instructions
- 1. Preheat oven to 350°F and grease a 9×13-inch baking dish.
- 2. Cook ground beef and onion in a large skillet over medium-high heat for 8-10 minutes until browned. Drain fat.
- 3. Add 1 cup enchilada sauce to beef and simmer 2-3 minutes.
- 4. Warm tortillas in microwave for 30-45 seconds wrapped in damp paper towels.
- 5. Place 1/3 cup beef mixture and 2 tablespoons cheese in each tortilla, roll tightly, and place seam-side down in baking dish.
- 6. Pour remaining enchilada sauce over rolled enchiladas and top with remaining cheese.
- 7. Bake 20-25 minutes until cheese is melted and bubbly.
- 8. Let rest 5 minutes before serving.
Notes
Store covered in refrigerator up to 4 days. Freeze up to 3 months. Can be assembled 24 hours ahead before baking.
