Roasted Cauliflower and Chickpeas with Tahini Dressing

Description

A vibrant, nutty salad featuring roasted cauliflower and crispy chickpeas, drizzled with a zesty tahini dressing.


Ingredients

Scale
  • 1 small head of cauliflower
  • 1 tbsp nutritional yeast
  • 1 tsp dry thyme
  • 1 tsp garlic powder
  • 1/2 tsp ground coriander
  • 1 (15 oz) can chickpeas, drained and rinsed
  • 2 1/2 tbsp avocado oil
  • Kosher salt, to taste
  • 2 tsp extra virgin olive oil
  • 1 medium lemon, zested and cut in half
  • 2 shallots, sliced
  • 1 Fresno pepper, sliced
  • 4 Medjool dates, pits removed and diced
  • 2 cloves garlic, grated
  • 1/4 cup tahini
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated
  • 1/4 cup finely minced chives
  • 34 tbsp cold water

Instructions

  1. Preheat the oven to 425°F and line two baking trays with parchment paper.
  2. Zest the lemon onto a cutting board, then cut the lemon in half and set aside.
  3. Cut the cauliflower into 1-inch florets, place them on one baking tray, and add nutritional yeast, thyme, coriander, garlic, and salt. Drizzle with 1 1/2 tbsp oil, tossing to coat.
  4. Spread the cauliflower and roast for 20 minutes.
  5. Flip the florets and roast for an additional 10 minutes, until charred.
  6. Dry the chickpeas with a kitchen towel and place them on a second baking tray. Add 1 tbsp oil, salt, and thyme; toss to coat and spread evenly.
  7. Bake the chickpeas for 30 minutes, tossing halfway through.
  8. Heat a sauté pan over medium-low heat with 2 tsp oil, and place the lemon halves cut side down in the pan while sautéing shallots and Fresno pepper.
  9. Sauté the shallots for 2 minutes, then add garlic and dates, cooking for an additional 3-5 minutes.
  10. Combine roasted chickpeas, shallot mixture, and half the zested lemon in the tray of cauliflower. Squeeze the juice of half the seared lemon over it and gently toss.
  11. In a small bowl, whisk tahini, mustard, garlic, remaining lemon zest and juice, salt, and chives, gradually whisking in cold water to desired consistency.
  12. Portion the cauliflower mixture over grains and drizzle with the dressing to serve.

Notes

Be sure to dry the chickpeas thoroughly before roasting for the best texture.
