- 1 cup mushrooms, sliced
- 2 cups potatoes, diced
- 4 cups vegetable broth
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
- Olive oil for sautéing
- Fresh herbs for garnish
Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add onions and garlic, sautéing until translucent, about 4-5 minutes.
- Add mushrooms and cook until softened, about 3-4 minutes.
- Stir in potatoes, vegetable broth, thyme, rosemary, and seasoning.
- Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
- Add the cooked white beans and heat through, about 5 minutes.
Notes
Serve with crusty bread or a fresh salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
