Description

A comforting stew packed with white beans, mushrooms, and potatoes, perfect for meal prep or warming up on a chilly evening.


Ingredients

  • 2 cups white beans, cooked
  • 1 cup mushrooms, sliced
  • 2 cups potatoes, diced
  • 4 cups vegetable broth
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste
  • Olive oil for sautéing
  • Fresh herbs for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat until shimmering.
  2. Add onions and garlic, sautéing until translucent, about 4-5 minutes.
  3. Add mushrooms and cook until softened, about 3-4 minutes.
  4. Stir in potatoes, vegetable broth, thyme, rosemary, and seasoning.
  5. Bring to a boil, then reduce to a simmer and cook until potatoes are tender, about 15-20 minutes.
  6. Add the cooked white beans and heat through, about 5 minutes.

Notes

Serve with crusty bread or a fresh salad for a complete meal. Store leftovers in an airtight container in the fridge for up to 3 days.
