- 4 tbsp soy sauce
- 2 tbsp sesame oil
- 1 tbsp rice vinegar
- 1 cup brown rice
- 1 cup carrots, julienned
- 1 cup cucumber, sliced
- 1 avocado, sliced
- ¼ cup green onions, chopped
- 1 sheet seaweed, cut into strips
- 1 tsp sesame seeds, toasted
Instructions
- Prep the tofu: Slice the firm tofu into cubes and pat dry with a paper towel.
- Marinate: Combine soy sauce, sesame oil, and rice vinegar in a bowl, then add the tofu cubes and let them soak for 15 minutes at room temperature.
- Cook the rice: Prepare the brown rice according to package instructions until fluffy and tender, usually taking about 40-45 minutes.
- Sauté the tofu: Heat a skillet over medium-high heat, add marinated tofu, and sauté until golden brown on all sides, about 10 minutes.
- Assemble the bowl: Place cooked brown rice at the bottom, followed by sautéed tofu, julienned carrots, cucumber slices, avocado, and a sprinkle of sesame seeds and green onions.
Notes
Best eaten fresh; the avocado may brown if stored. Ensure tofu is dry for optimal crispiness.
