Ingredients

  • 4 tbsp soy sauce
  • 2 tbsp sesame oil
  • 1 tbsp rice vinegar
  • 1 cup brown rice
  • 1 cup carrots, julienned
  • 1 cup cucumber, sliced
  • 1 avocado, sliced
  • ¼ cup green onions, chopped
  • 1 sheet seaweed, cut into strips
  • 1 tsp sesame seeds, toasted

Instructions

  1. Prep the tofu: Slice the firm tofu into cubes and pat dry with a paper towel.
  2. Marinate: Combine soy sauce, sesame oil, and rice vinegar in a bowl, then add the tofu cubes and let them soak for 15 minutes at room temperature.
  3. Cook the rice: Prepare the brown rice according to package instructions until fluffy and tender, usually taking about 40-45 minutes.
  4. Sauté the tofu: Heat a skillet over medium-high heat, add marinated tofu, and sauté until golden brown on all sides, about 10 minutes.
  5. Assemble the bowl: Place cooked brown rice at the bottom, followed by sautéed tofu, julienned carrots, cucumber slices, avocado, and a sprinkle of sesame seeds and green onions.

Notes

Best eaten fresh; the avocado may brown if stored. Ensure tofu is dry for optimal crispiness.
