Description

Crispy and flavorful roasted Yukon gold potatoes with a spicy seasoning blend, finished with lemon juice and cilantro.


Ingredients

  • 2 lbs Yukon gold potatoes, cut into 1-inch cubes
  • ¾ tsp onion powder
  • ¼ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper powder
  • ½ tsp paprika
  • 2 Tbsp olive oil
  • 1 tsp garlic, minced
  • ¼ tsp cayenne pepper
  • ½ cup cilantro, chopped
  • 1 tsp lemon juice, or to taste

Instructions

  1. Pat the potatoes dry with paper towels until completely moisture-free.
  2. Mix the onion powder, garlic powder, salt, black pepper, and paprika in a medium bowl.
  3. Stir in the olive oil to create a paste.
  4. Add the potatoes to the spice mix and coat evenly.
  5. Spread the potatoes on a baking sheet and roast at 425°F for 25-30 minutes, flipping halfway.
  6. Serve drizzled with lemon juice and topped with cilantro.

Notes

Best eaten fresh on the same day for optimal crispiness. Refrigeration may soften the crust.
