Description

Ingredients

  • 1 can (15 ounces) red beans, drained and rinsed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 teaspoon Cajun seasoning
  • 2 cups cooked rice
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 2 cups chicken broth

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add sliced sausage, onion, garlic, and green bell pepper. Cook until the vegetables are tender and the sausage is browned, about 5-7 minutes.
  3. Stir in the red beans and Cajun seasoning; cook until aromatic.
  4. Pour in the chicken broth and bring to a simmer. Allow it to simmer for about 10-15 minutes.
  5. Serve the mixture over cooked rice and season with salt and pepper to taste.
