Description

A comforting, creamy potato soup that warms you up on cold days, packed with protein and flavor.


Ingredients

Scale
  • 4 large potatoes, peeled and diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups vegetable or chicken broth
  • 1 cup milk or cream
  • 1 cup cooked protein (such as chicken, turkey, or beans)
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Chopped chives or parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Add onion and garlic; sauté until onions are translucent and fragrant.
  3. Add diced potatoes and broth to the pot; bring to a boil.
  4. Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  5. Use an immersion blender to blend the soup until smooth.
  6. Stir in milk or cream, cooked protein, salt, and pepper; heat through.
  7. Serve hot, garnished with chives or parsley.

Notes

This soup gets better the next day. Reheat with a splash of broth if it gets too thick.
