Ingredients

- 4 large potatoes, peeled and diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable or chicken broth
- 1 cup milk or cream
- 1 cup cooked protein (such as chicken, turkey, or beans)
- Salt and pepper to taste
- 2 tablespoons olive oil
- Chopped chives or parsley for garnish
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic; sauté until onions are translucent and fragrant.
- Add diced potatoes and broth to the pot; bring to a boil.
- Reduce heat and simmer until potatoes are tender, about 15-20 minutes.
- Use an immersion blender to blend the soup until smooth.
- Stir in milk or cream, cooked protein, salt, and pepper; heat through.
- Serve hot, garnished with chives or parsley.
Notes
This soup gets better the next day. Reheat with a splash of broth if it gets too thick.
