Description
Crispy roasted baby potatoes tossed in a fragrant garlic butter sauce, perfect as a side dish.
Ingredients
Scale
- 1 pound baby potatoes
- 4 cloves fresh garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- Salt and pepper to taste
- Fresh parsley (optional)
Instructions
- Preheat your oven to 400°F and line a baking sheet with parchment paper.
- Wash and dry the baby potatoes, then toss them in a large bowl with olive oil, salt, and pepper until evenly coated.
- Spread the seasoned potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, watching for a golden brown color and fork-tender texture.
- While the potatoes are roasting, melt the unsalted butter in a pan over medium heat and add the minced garlic, sautéing until fragrant—around 1-2 minutes.
- Once the potatoes are done roasting, combine them with the garlic sauce in the pan, tossing gently to coat.
- Transfer the potatoes to a serving platter, garnish with parsley if desired, and serve hot.
Notes
Spread potatoes in a single layer for even roasting; watch garlic closely to prevent burning.
