Instructions

  1. Preheat your oven to 400°F and line a baking sheet with parchment paper.
  2. Wash and dry the baby potatoes, then toss them in a large bowl with olive oil, salt, and pepper until evenly coated.
  3. Spread the seasoned potatoes in a single layer on the prepared baking sheet and roast for 25-30 minutes, watching for a golden brown color and fork-tender texture.
  4. While the potatoes are roasting, melt the unsalted butter in a pan over medium heat and add the minced garlic, sautéing until fragrant—around 1-2 minutes.
  5. Once the potatoes are done roasting, combine them with the garlic sauce in the pan, tossing gently to coat.
  6. Transfer the potatoes to a serving platter, garnish with parsley if desired, and serve hot.
