Description
A delicious and crispy tofu dish marinated in teriyaki sauce and paired with sweet grilled pineapple, served over rice.
Ingredients

- 14 oz firm tofu, pressed and cubed
- 1 cup chopped pineapple, for glaze and grilling
- 1 small red onion, chopped
- 1 cup uncooked rice
- 1/4 cup teriyaki sauce
- 2 tbsp soy sauce
- 2 tbsp brown sugar
- 1 tbsp minced ginger
- 1 tbsp minced garlic
- 1 tbsp olive oil
- Salt, to taste
- Pepper, to taste
Instructions
- Preheat the oven to 400°F.
- Press the tofu to remove excess moisture, then cut it into cubes.
- Mix teriyaki sauce, soy sauce, brown sugar, minced ginger, and minced garlic to create a marinade.
- Add the tofu cubes to the marinade and let it sit for at least 30 minutes.
- Prepare the pineapple glaze by cooking chopped pineapple with some brown sugar and a little water until it thickens.
- Bake marinated tofu for 25-30 minutes, turning halfway through, until crispy.
- Grill pineapple slices until charred.
- Cook rice according to package instructions.
- Serve crispy tofu over rice, topped with grilled pineapple and chopped red onion.
Notes
Best eaten the same day; tofu loses its crunch overnight. You can prepare the marinated tofu a day in advance.
