Description

A quick and delicious creamy chicken pasta dish with fresh vegetables, perfect for weeknight dinners.


Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 1 lb boneless, skinless chicken breast, diced
  • 2 cups mixed vegetables (bell peppers, zucchini, broccoli, carrots)
  • 2 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil for garnish (optional)

Instructions

  1. Cook the pasta according to package instructions. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat.
  3. Add diced chicken and cook until browned, about 5-7 minutes.
  4. Add minced garlic and mixed vegetables to the skillet, cooking until vegetables are tender, about 4-5 minutes.
  5. Reduce heat to low, then stir in heavy cream and Parmesan cheese, mixing until smooth.
  6. Season with salt and pepper, then add the cooked pasta, tossing to combine.
  7. Serve hot, garnished with fresh basil if desired.

Notes

Use heavy cream for a rich texture. Best eaten fresh but can be refrigerated for 3-4 days.
