Instructions
- Heat olive oil in a large pot over medium heat until shimmering.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and grated ginger, cooking until fragrant, about 1 minute.
- Add the curry powder and stir for a minute, allowing the spices to bloom.
- Incorporate the diced tomatoes and coconut milk, bringing the mixture to a simmer.
- Add the butter beans and season with salt, mixing gently.
- Let it cook for about 10-15 minutes, allowing the flavors to deepen.
- Serve hot, garnished with fresh cilantro.
