Description

A quick and satisfying skillet meal with chicken sausage, white beans, and wilted spinach, perfect for busy weeknights.


Ingredients

  • 1 lb chicken sausage
  • 1 can white beans (cannellini or great northern), drained and rinsed
  • 1 onion, diced
  • 2 garlic cloves, minced
  • 1 can diced tomatoes
  • 2 cups spinach
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat until shimmering.
  2. Add diced onion and sauté until translucent, about 3-4 minutes.
  3. Stir in minced garlic and cook for an additional minute.
  4. Slice the chicken sausage and add it to the skillet, cooking until browned, about 5-6 minutes.
  5. Add the drained white beans, diced tomatoes, and Italian seasoning. Combine well.
  6. Stir well and let it simmer for about 5-10 minutes until heated through.
  7. Add spinach and cook until wilted, about 2 minutes.
  8. Season with salt and pepper before serving.

Notes

Reheats well. Store in an airtight container for up to 3 days. Best eaten fresh as spinach softens if it sits.
