- 1 lb chicken sausage
- 1 can white beans (cannellini or great northern), drained and rinsed
- 1 onion, diced
- 2 garlic cloves, minced
- 1 can diced tomatoes
- 2 cups spinach
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Olive oil
Instructions
- Heat olive oil in a skillet over medium heat until shimmering.
- Add diced onion and sauté until translucent, about 3-4 minutes.
- Stir in minced garlic and cook for an additional minute.
- Slice the chicken sausage and add it to the skillet, cooking until browned, about 5-6 minutes.
- Add the drained white beans, diced tomatoes, and Italian seasoning. Combine well.
- Stir well and let it simmer for about 5-10 minutes until heated through.
- Add spinach and cook until wilted, about 2 minutes.
- Season with salt and pepper before serving.
Notes
Reheats well. Store in an airtight container for up to 3 days. Best eaten fresh as spinach softens if it sits.
