Description

A quick and easy one-pan meal featuring chickpeas, fresh vegetables, and crumbled feta cheese, perfect for using up leftover veggies.


Ingredients

  • 1 can of chickpeas (garbanzo beans), drained and rinsed
  • 1 cup of feta cheese, crumbled
  • 1 bell pepper, diced
  • 1 cup of cherry tomatoes, halved
  • 1 zucchini, sliced
  • 2 cups of spinach
  • 2 tablespoons of olive oil
  • 1 teaspoon of dried oregano
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat until shimmering.
  2. Add bell pepper, zucchini, and cherry tomatoes, sautéing for about 5 minutes until soft and fragrant.
  3. Stir in the chickpeas, spinach, oregano, salt, and pepper, cooking for another 5 minutes until spinach is wilted.
  4. Top with crumbled feta cheese and serve warm.

Notes

To maintain texture, add fresh spinach when reheating, as cooked spinach may become mushy.
