Description

A quick and flavorful dish made with sautéed fresh vegetables and a mix of black and kidney beans, seasoned with Cajun spices.


Ingredients

  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 tablespoon olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 1 celery stalk, chopped
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large skillet, heat olive oil over medium heat until shimmering.
  2. Add onion, garlic, bell pepper, and celery; sauté until vegetables are tender.
  3. Stir in the Cajun seasoning and cook for another minute.
  4. Add the black beans and kidney beans. Stir to combine and heat through.
  5. Season with salt and pepper to taste.
  6. Garnish with fresh parsley and serve.

Notes

Best served fresh, but can be stored for up to 3 days in the fridge.
