Description

A vibrant and crunchy salad made with shredded carrots, green onions, and a fragrant sesame dressing that’s perfect for a quick side dish.

Ingredients

Scale
  • 4 cups shredded carrots
  • 2 tablespoons sesame oil
  • 2 tablespoons rice vinegar
  • 1 tablespoon soy sauce
  • 1 tablespoon honey or agave syrup
  • 1 clove garlic, minced
  • 1 teaspoon grated ginger
  • 1 tablespoon sesame seeds
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 green onions, sliced

Instructions

  1. Combine the shredded carrots, green onions, and sesame seeds in a large bowl.
  2. Whisk together the sesame oil, rice vinegar, soy sauce, honey, garlic, ginger, and red pepper flakes in a separate bowl.
  3. Pour the dressing over the carrot mixture and toss to combine.
  4. Let the salad sit for at least 15 minutes to allow the flavors to meld.
  5. Serve chilled or at room temperature.

Notes

Best eaten the same day as carrots may soften. Dress right before serving for maximum crunch.
