Instructions
- Whisk together the peanut butter, soy sauce, rice vinegar, sriracha, minced garlic, and sesame oil until smooth and creamy.
- Add the sliced cucumbers to the bowl and toss well to coat them evenly in the sauce.
- Season with salt to taste, mixing thoroughly.
- Let the salad sit for 5 minutes to allow the cucumbers to absorb the sauce.
Notes
Best eaten the same day to avoid watery sauce. Prepare the sauce a day in advance but do not mix it with cucumbers until just before serving.
