Description

A refreshing cucumber salad tossed in a creamy spicy peanut sauce, perfect for hot days.


Ingredients

  • 2 cups cucumbers, sliced
  • 1/4 cup creamy peanut butter
  • 2 tbsp soy sauce
  • 1 tbsp rice vinegar
  • 1 tbsp sriracha sauce
  • 1 tsp garlic, minced
  • 1 tbsp sesame oil
  • Salt, to taste

Instructions

  1. Whisk together the peanut butter, soy sauce, rice vinegar, sriracha, minced garlic, and sesame oil until smooth and creamy.
  2. Add the sliced cucumbers to the bowl and toss well to coat them evenly in the sauce.
  3. Season with salt to taste, mixing thoroughly.
  4. Let the salad sit for 5 minutes to allow the cucumbers to absorb the sauce.

Notes

Best eaten the same day to avoid watery sauce. Prepare the sauce a day in advance but do not mix it with cucumbers until just before serving.
