Description

A refreshing salad combining white beans, cucumber, and a tangy garlic vinaigrette.


Ingredients

  • 1 garlic clove (minced)
  • Juice of 1 small lemon (about 2 tablespoons)
  • 2 tablespoons extra virgin olive oil
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon salt
  • Black pepper (to taste)
  • 2 15-ounce cans of white beans, rinsed and drained
  • 2 Persian cucumbers, thinly sliced (or 1/2 a large cucumber)
  • 57 radishes, cut into matchsticks
  • 0.75 oz fresh dill, stems removed and finely chopped
  • 2 green onions, green and white parts thinly sliced

Instructions

  1. Make the vinaigrette: In a small bowl, whisk together the garlic, lemon juice, olive oil, mustard, salt, and pepper. Let it sit for 5 minutes to mellow the garlic.
  2. Prepare the salad: In a large bowl, add the white beans, cucumber, radishes, dill, and green onions.
  3. Dress the salad: Pour the vinaigrette over the salad and mix well until everything is evenly combined. Adjust seasoning if necessary.
  4. Serve immediately or refrigerate for 15 to 30 minutes before serving to enhance the flavors.

Notes

This salad is best enjoyed fresh but can be prepped ahead. Store the dressing separately until serving for optimal flavor.
