- 200g white chocolate
- 2 cups heavy cream
- 1 cup fresh raspberries
- 1 cup crushed pistachios
- 200g savoiardi biscuits
- 1/2 cup sugar
- 1 tsp vanilla extract
- 1/4 cup water
Instructions
- Melt the white chocolate in a bowl over simmering water and let it cool slightly.
- In a separate bowl, whip the heavy cream until soft peaks form.
- Gently fold the melted chocolate into the whipped cream, followed by the vanilla extract and sugar.
- Stir in the fresh raspberries, reserving a few for garnishing.
- Line a cake pan with plastic wrap and arrange the savoiardi biscuits on the sides and bottom, dipping them in warm water.
- Pour the mousse mixture into the prepared pan, smoothing the top.
- Refrigerate for at least 4 hours or overnight.
- Once set, remove from the mold, top with crushed pistachios, and serve chilled.
Notes
Use high-quality white chocolate for best results. Consider adding a hint of citrus zest for added flavor.
