Comforting Vegan Pizza Rolls filled with spinach and creamy tofu ricotta, perfect for busy nights or family get-togethers.

- 1 (14-ounce) package extra-firm tofu (pressed)
- 1/2 cup fresh basil leaves
- 1/3 cup nutritional yeast
- 1 tablespoon tahini (or almond butter)
- 2 teaspoons Italian seasoning (plus more for topping)
- 1 tablespoon lemon juice
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Optional: 2-4 cloves garlic (for extra flavor)
- Sea salt (to taste)
- 2 cloves garlic (finely diced)
- 2 tablespoons finely diced shallots
- 4 packed cups baby spinach (chopped)
- 22 ounces fresh pizza dough
- 1 teaspoon crushed red pepper flakes and Italian seasoning (for topping)
Instructions
- Prep the pizza dough by letting it come to room temperature for at least 15 minutes.
- Preheat the oven to 400 degrees Fahrenheit.
- Prepare a non-stick baking dish or line with parchment paper.
- In a food processor, combine tofu, basil, nutritional yeast, tahini, Italian seasoning, lemon juice, garlic powder, onion powder, and optional garlic. Process until creamy.
- In a sauté pan, heat water over medium-high heat and sauté shallots and garlic for 2-3 minutes. Add spinach and cook until wilted.
- Roll out the pizza dough into a large rectangle, about 1/4 inch thick.
- Spread the tofu mixture over the dough, then top with sautéed spinach.
- Roll the dough into a log and cut into sections (about 8-9 pieces).
- Arrange sections in the baking dish, touching edges. Brush tops with oil and sprinkle with seasonings if desired.
- Bake for 25-30 minutes or until golden-brown on top.
- Serve warm with pizza or marinara sauce for dipping.
Notes
Store leftovers in an airtight container in the fridge for up to 4 days. Freeze individual rolls for up to 3 months.
