Description

Comforting Vegan Pizza Rolls filled with spinach and creamy tofu ricotta, perfect for busy nights or family get-togethers.


Ingredients

Scale
  • 1 (14-ounce) package extra-firm tofu (pressed)
  • 1/2 cup fresh basil leaves
  • 1/3 cup nutritional yeast
  • 1 tablespoon tahini (or almond butter)
  • 2 teaspoons Italian seasoning (plus more for topping)
  • 1 tablespoon lemon juice
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Optional: 2-4 cloves garlic (for extra flavor)
  • Sea salt (to taste)
  • 2 cloves garlic (finely diced)
  • 2 tablespoons finely diced shallots
  • 4 packed cups baby spinach (chopped)
  • 22 ounces fresh pizza dough
  • 1 teaspoon crushed red pepper flakes and Italian seasoning (for topping)

Instructions

  1. Prep the pizza dough by letting it come to room temperature for at least 15 minutes.
  2. Preheat the oven to 400 degrees Fahrenheit.
  3. Prepare a non-stick baking dish or line with parchment paper.
  4. In a food processor, combine tofu, basil, nutritional yeast, tahini, Italian seasoning, lemon juice, garlic powder, onion powder, and optional garlic. Process until creamy.
  5. In a sauté pan, heat water over medium-high heat and sauté shallots and garlic for 2-3 minutes. Add spinach and cook until wilted.
  6. Roll out the pizza dough into a large rectangle, about 1/4 inch thick.
  7. Spread the tofu mixture over the dough, then top with sautéed spinach.
  8. Roll the dough into a log and cut into sections (about 8-9 pieces).
  9. Arrange sections in the baking dish, touching edges. Brush tops with oil and sprinkle with seasonings if desired.
  10. Bake for 25-30 minutes or until golden-brown on top.
  11. Serve warm with pizza or marinara sauce for dipping.

Notes

Store leftovers in an airtight container in the fridge for up to 4 days. Freeze individual rolls for up to 3 months.
