Description

Warm and comforting Vegan Pesto Pizza Rolls filled with sautéed mushrooms, onions, and rich pesto, perfect for any meal occasion.


Ingredients

Scale
  • 3/4 cup warm water
  • 2 tsp active dry or instant yeast
  • 1 tbsp flour
  • 2 tbsp semolina flour
  • 1/2 tsp salt
  • 2 cups all-purpose flour
  • 1 tbsp olive oil, divided
  • 1 tsp oil
  • 1/2 cup sliced onion
  • 7 oz sliced mushrooms
  • 1/4 tsp salt
  • 1/2 tsp dried oregano
  • 1/2 tsp garlic powder
  • 4 tbsps vegan pesto
  • Fresh basil, optional
  • Vegan mozzarella, shredded, optional
  • Red pepper flakes, optional

Instructions

  1. Warm the water until it’s warm to the touch. Add yeast and 1 tablespoon flour, mixing gently; let the yeast activate for 5 minutes.
  2. Stir the salt into the semolina flour. Add the semolina flour and 1.5 cups of flour to the yeast mixture, followed by 2 teaspoons of olive oil. Mix until the dough comes together, adding more flour as needed until slightly sticky.
  3. Cover the dough with a damp cloth and let it rise for 30 minutes until doubled in size.
  4. Meanwhile, heat a skillet over medium heat. Add 1 teaspoon of oil, onion, and mushrooms. Cook for 5 minutes, then add 1/4 teaspoon salt, oregano, and garlic powder; cook until tender, about 5-8 minutes.
  5. Uncover the risen dough, add 1 teaspoon of oil and a tablespoon of flour, then punch down the dough. Roll out to 15 by 10 inches thick.
  6. Spread 4 tablespoons of vegan pesto over the dough, sprinkle with sautéed mushroom mixture, red pepper flakes, and optional vegan mozzarella.
  7. Roll the dough up tightly and slice into pizza rolls. Place in a greased baking dish.
  8. Bake in a preheated oven at 400°F for 22 to 24 minutes until golden brown on top.
  9. Let the rolls cool for 5 minutes, then serve warm with a drizzle of olive oil or pizza sauce.

Notes

Store leftovers in an airtight container in the fridge for up to 3 days or freeze before baking for 2-3 months.
