- 1/2 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 large egg
- 1 cup milk
- 2 tablespoons melted butter
- 1 teaspoon vanilla extract
- Oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, granulated sugar, baking powder, and salt until well combined.
- In another bowl, whisk together the egg, milk, melted butter, and vanilla extract until smooth and creamy.
- Gently fold the wet ingredients into the dry ingredients until just combined; the batter will be thick and lumpy.
- Heat the oil in a deep fryer or heavy pot to about 350°F (175°C).
- Using a spoon, drop dollops of batter into the hot oil and fry until golden brown on both sides, about 2 to 3 minutes.
- Using a slotted spoon, remove the beignets and drain them on paper towels.
- Dust with powdered sugar immediately after frying.
Notes
For extra fluffiness, don’t overmix the batter; lumps are your friends. Allow the oil to return to temperature between batches for crispy exterior. You can add flavored sugar for a twist.
